If you are looking for an easy flat route, go bike the San Luis River trail. This route is for real cyclists!
This route is a challenge because it is hilly and has tricky navigation.
If you do not have computer turn-by-turn navigation, then set your miles to zero, and follow the turn mileage. Mental stimulation is good.
Vista is full of quiet two-lane curving hilly roads. Perfect cycling!
Low point is the busy Melrose slog home.
